Yeast flavor in my American IPA

So my American IPA has too much yeast flavor and I am not sure how to remedy this. I want a a crisp clean hoppy aromatic finish and the yeast and malt are all I really taste. My first thoughts were that I have been leaving it in the primary too long? I am assuming that the longer its sits in the primary or secondary with the yeast and other sediments, the more "yeast flavor" will be imparted to the …

How am I (accidentally) making low alcohol beer?

I seem to be the king of low alcohol beer! I have just brewed the “Make Your Own American IPA” from the Range. It started fermenting (quite aggressively) within a day. I left it for approx 14 days until I added the hops and at 21 days I tasted it. The instructions say that you can bottle it “once it no longer tastes sweet” or in other words I guess when all the sugar had turned to alcohol (to quote …

What's the best UK malt to use instead of 'US 2-row pale ale malt'

So I know this question has been asked the other way round, but I'm in the UK and I'd like to make a solid American IPA, and I'm wondering what the best UK malt would be to replace US pale ale malt for this purpose. I've heard that staple UK varieties like Maris Otter don't quite work well. Does anyone have any suggestions? I should also add that I don't know of any means to get US malt in the …

green sludge floating

https://docs.google.com/file/d/0B3nIWsUoDjs2RVlsZ3FnaWdYRjQ/edit?usp=docslist_api I am brewing a double IPA. The beer is in the secondary and has been there for 10 days. I recorded 7.8% alc when I transferred it. I just noticed this green sludge in the top forming. I am dry hoping with an ounce of pellets in cheese cloth. There doesn't seem to be hair growing in the sludge. It's this hopsludge or mold? Thanks. The picture I'm including in the link makes it look brown but it looks …

Recommendations for Simple, Hoppy IPA

I'm a very new brewer, just cracked my first beer of my first batch tonight, which was a Coopers IPA. The beer was quite a bit better than I had expected for a first-time, but did not taste much like the strong, hoppy IPAs that I love. I'd like to take another crack at it, but am not yet feeling courageous enough to get too complex with the recipe. Can anyone recommend a beginner's level brewkit or recipe that I …

I want to brew this American IPA kit with some ginger -- terrible idea or give it a go?

Love the taste of ginger, came across Papazian's Dark Gingered Ale recipe and wanted to try it out but I've already got ten gallons of dark beer in the house and I just bought this American IPA kit... would it be a terrible idea to add 1 or 2 oz of grated ginger for fifteen minutes during the boil? My inclination is to just experiment, but I'm relatively new to homebrew and don't want to do this if it's just …
