What do you do about high cider FG?

Is my old beer mix still good for brewing?

I have a couple old 1 gallon beer brewing kits from the Brooklyn Brew Shop. I never got around to using them, life got in the way. In any event, I still have them, the yeast expired in 2013 (so I'd need new yeast), but would everything else still be good? Everything is Humidically sealed. This is a all grain kit, not a malt extract kit.

Clearing using finings during racking prior to bottling - will there still be enough yeast for second fermentation?

I am taking the opportunity to use the current situation to get brewing again. I'm only using kits at the moment, but plan to move to next stages soon. Recently expired kit. Is the yeast still ok?

I have just received a kit which says that the expiration date is in April 2019 (2 months ago). I am quite confident that the extract is still okay, but I'm wondering about the yeast. Is it still alive? It is not so easy to get new yeast, as there are no local brewing shops in my area and I'll have to order it online and wait for quite a while for it to arrive.

Effects of extra sugar in kit beer

A friend of mine just set a Morgans Golden Saaz Pilsner with kit yeast and 1kg DME + 1kg sugar. He is fermenting at ~23°C. The kit requests for 1 kg of sugar but my firend accidentally put much more. What would be the effect of this extra sugar. Will it spoil the taste of the kit?

The holidays are messing up the bottling schedule

I brewed up the Grapefruit Sultan from Midwest on 12/7 and I'm facing a bottling predicament. As it stands fermentation is complete and the yeast are just cleaning up. Can I rack to and clear my wine in a lidded plastic bucket without a stopper?
