Use expired yeast or wait for new yeast to arrive?

I just brewed with what I now realise is a rather old Williams Brewing Kolsch kit. The yeast is Wyeast 2565 Kolsch and the packet has already expanded. I have no idea when it expanded, so I assume it must be months ago and that the yeast has already died/gone dormant. The manufacture date is 07 Jul 2014. How long must an ale be conditioned in bottles outside of the fridgerator?

I bottled my first batch of beer 72 hours ago. I am under the impression that bottled beer should not immediately be placed in the refrigerator, as this would prevent the remaining yeast from carbonating the bottle with the priming sugar. Should I extend boil times if temperature drops?

I use an electric burner when I home brew. It doesn't have a ton of excess power but it can get a nice rolling boil going. Occasionally, when I add malt extract to my kettle the temperature drops several degrees below boiling. It sometimes takes 5 or 10 minutes to return to an actual boil. How long does bottle priming take? (Ginger Beer)

I've test bottled one 500ml bottle of Ginger Beer with one Coopers priming drop. How long does priming take? If I opened it in a day would it have some pressure/fizz/gas or does it need a week or so? I want to ascertain if one drop was enough as I don't trust the terrible instructions' rough 'heaped teaspoon' amount; seems far too inexact to me!

Priming sugar/drop mixing worry, in a test bottling

I'm preparing to bottle a 30 pint batch of Ginger Beer. It started at 1.041 and has finished at a steady 1.008 after 2 weeks or so.
