What is the shelf life of canned LME?

I have a buddy that has a Mr. Beer kit he said he is never going to use (It is about 3 years old). I mostly want it for the P.E.T. bottles but was wondering: Depending on what ingredients are in the kit would it be ok to try and use some of them? Or would I just be risking a bad batch of beer?

How to keep extract from caramelizing during the boil?

I'm brand new to brewing and am trying to make sense of the instructions from my extract kit (Brewer's Best Amber Ale). I've been brewing 2 gal batches of beer from extracts like Mr Beer. Their LME packets are only 8.8 oz. Can I take a 3.3 lb. can, dilute it with a sufficient amount of water and divide it up into 6 containers to use at a later time? How long can it keep?

Home-made LME&DME-is it achievable?

Pretty often when you brew an all-grain batch you get a quantity of extra wort with no apparent use. A common practice is to keep some of that wort for a starter for the next batch. Could someone instead process it into LME (by boiling it for some more time and storing it in a sanitised vessel) or, even better into DME (by other means) in order to use it as a fermentable in the future?
