Started first fermentation with Red Star Blanc. I was planning on adding the Cuvee yeast for second fermentation. Will this be ok for sparkling wine?

Can I use sodium metabisulphite and potassium sorbate together before bottling?

Any way to test for oxidation in beer?

New here. I've been reading up on transferring from fermenter to keg (or secondary FM) and the associated concerns with introducing oxygen into the beer.
